At two years of age, our Overjarige Gouda has undergone a total molecular transformation. After 24 months in our climate-controlled aging rooms, the moisture has departed, leaving behind an amber-hued concentrate of our finest farm milk.
The Profile: Deeply evocative of toasted butterscotch, burnt sugar, and umami. This cheese is heavily studded with tyrosine crystals-the crunchy gems that act as a hallmark of a world-class aged Gouda. It is brittle, intense, and deeply memorable.
