Our De Vor Plain Aged is for those who find younger cheeses too mild but aren't quite ready for the intensity of our 1000-day wheels. As the cheese hits the one-year mark, the sugars begin to caramelize, giving it a bright, zesty zing.

The Profile: It retains a creaminess that allows for a clean slice, but the flavor is noticeably more spirited. It possesses a savory, toasted-butter finish that lingers beautifully on the palate.

Presentation: An exceptional social cheese. It stands up beautifully to green olives, spiced nuts, and a crisp, dry Hard Cider or a bright Sauvignon Blanc.
